These ‘burgers’ are so easy to make and are really tasty! Prepare these for a summer lunch outside or dinner with some grilled veggies and a big salad.
- 1 15-oz. can of chickpeas or garbanzo beans (drained, rinsed and patted dry)
- 1 egg
- 1 tablespoon of Greek seasoning (like McCormick dressing mix)
- 1/4 cup of plain bread crumbs
After draining, rinsing and patting dry the chickpeas, either pulse them a few times in a food processor, or mash with a potato masher. Be careful not to over-pulse them, I like to have a some chunky bits of the chickpeas in there to keep the mixture semi firm. Add an egg, seasoning and breadcrumbs and combine well. Divide the mixture in four and form into patties.
Over medium high heat, in a skillet with cooking spray or a little oil, cook patties until golden brown, flipping with a spatula to cook both sides.
