Fall is my favorite season. Growing up in New England, fall was always a special time. The beautifully bright foliage, turn to crisp air, and start of school signalled the beginning of the holiday season. As a food lover, many of my memories involve food and the harvest provides an abundance of wonderful ingredients and flavors. Among those is pumpkin and the wonderful combination of pumpkin with warming spices, like cinnamon, nutmeg and cloves into one of America’s favorite flavors – pumpkin spice.

These moist and fudgy brownies combine two of my favorite things – chocolate and pumpkin spice. They contain no butter or oil and are only 138 calories per brownie. You have to try these, you won’t be disappointed!

Ingredients |

  • 1 cup of pure pumpkin puree, homemade or canned
  • 3/4 cup of sugar (I use raw turbinado cane sugar)
  • 1 large egg
  • 1 large egg white
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of pumpkin pie spice (also called mixed spice)
  • 1/2 cup of flour (I use whole grain oat flour)
  • 1/2 cup of unsweetened cocoa powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1/4 cup of mini chocolate chips

Instructions |

Preheat the oven to 350 degrees. Grease a square baking dish and set aside. In a mixing bowl, combine pumpkin, sugar egg and egg white, and vanilla extract. In another bowl combine pumpkin pie spice, flour, cocoa, baking soda, and baking powder. Combine wet and dry ingredients. Fold in most chocolate chips, reserving some to sprinkle on top of the batter. Pour batter into baking dish, sprinkle any reserved chips on top and baking for 20 minutes. After 20 minutes, turn off the oven and allow brownies to remain in warm oven, with the door closed for another 10 minutes. Remove brownies from oven and allow them to cool completely before cutting into 12 squares with a sharp knife. Allowing them to remain in the oven after baking for 10 more minutes and then cool completely insures that they will set but still remain moist and fudge-like. I love these even more the next day, so feel free to make in advance and store in the fridge!
