Bacon Avocado Frittata – all natural ingredients and super quick and easy!

Because I have been doing Whole30 this month, I have been on a bit of a bacon kick. I haven’t eaten real bacon for a while, mostly because the conventional wisdom is that it’s pretty bad for you, however, adding a bit of bacon to dishes provides a tremendous amount of flavor and a little goes a long way.

This is a really simple breakfast or brunch recipe that is as delicious as it is beautiful.

Ingredients |

  • 5 eggs (for a lower calorie/fat/cholesterol version use 2 eggs and 4 egg whites)
  • 4 slices of bacon (for a lower calorie/fat version use turkey bacon)
  • 1 ripe avocado
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • Seasoning of choice: I used a couple pinches of salt and pepper and 1/2 a tablespoon of salt free garlic and herb blend  but you can really add whatever sort of spices you like!

Instructions |

Preheat oven to 375.

In a pan, cook bacon on both side until crisp. Remove and set aside to cool. Retain about 1 tsp of bacon drippings in the pan and cook onion and garlic in the drippings until tender.

 

In a bowl, mash the avocado well. Lightly beat eggs and whisk together with mashed avocado. Spray an oven safe nonstick dish (I used a 9″ stainless skillet) with cooking spray or grease with butter or oil (I used olive oil).

Pour the egg and avocado mixture into the dish.

Chop cooled bacon into bits and sprinkle it on top of the egg and avocado mixture. Sprinkle onions and garlic on top and then sprinkle with seasoning of choice. Remember that bacon is already salty, so be careful not to add too much additional salt.

Bake in the oven for about 20-25 minutes, until eggs are firm.

Remove, cut into 4 slices and enjoy!
