Light Bacon, Egg and Cheese Poppers – your favorite breakfast flavors in every bite. Portable, freezable, and just 216 calories for six!

I love simple and quick food, and having something that tastes good and that is also portable makes healthy living with a busy schedule that much easier.

These little poppers are so simple and easy and are great for an impressive and fun breakfast or brunch or to make for yourself on the go.

They freeze well and you could make a large batch and store in the freezer in individual serving size bags to grab and go!

They incorporate all the wonderful flavors a full, fattening breakfast – bacon, eggs, and cheese in bite-sized snacks. Everyone will love them!

Ingredients | 

  • Nonstick cooking spray
  • 1 cup of buttermilk pancake/all purpose baking mix ( I used Trader Joe’s Buttermilk Pancake and All Purpose Baking Mix)
  • 1/2 cup of liquid egg whites
  • 1/2 cup of water
  • 6 slices of turkey bacon
  • 1/2 small onion, finely chopped
  • 3 wedges of light soft spreadable cheese (I used The Laughing Cow Garlic and Herb)
  • 3 tablespoons of light shredded cheese

Instructions | 

Preheat oven to 350f. Spray 24 cups in mini cupcake pan with good coating of nonstick cooking spray.

In a skillet coated with cooking spray, cook bacon, flipping to cook both sides and sauté onions. Set aside.

In a bowl or large measuring cup (the cup makes it easier to pour into pan after), combine with whisk or fork pancake/baking mix, egg whites, soft spreadable cheese and water until well incorporated and no lumps remain.

Chop cooked bacon, and fold half of chopped bacon and onions into batter.

Pour batter into mini cupcake pan, filling each cup about half way.

Top each one with a couple onion pieces, sprinkle of chopped bacon and sprinkle of shredded cheese.

Bake for about 10-12 minutes, until edges are golden brown.

Allow to cool before removing from pan.
