Chocolate and orange is one of my favorite combinations! These muffins are light, fluffy and packed full of bright and sweet flavors.

They would be perfect for a weekend breakfast and are so easy to make!

Ingredients |

  • 1 seedless orange
  • 1 1/2 cups of all purpose flour
  • 1 1/2 teaspoons of baking powder
  • 1/4 cup of sweetener and sugar blend (I used Domino Light Sugar and Stevia)
  • 1/4 cup of light sour cream
  • 1 egg, lightly beaten
  • 1 teaspoon of vanilla extract
  • 3 tablespoons of mini chocolate chips, divided
  • A pinch of salt

Instructions |

Preheat the oven to 350. Line a muffin pan with cupcake liners.

Grate all of the zest off the orange. Don’t skimp and only grate a bit, for that really nice punch of orange flavor, you need all the zest but just the orange part, the white part is bitter. Set the zest aside, and then peel the orange.

Place all of the segments of the orange into a food processor or blender and blend very well. In a mixing bowl, add egg, sweetener blend, orange, vanilla and about two-thirds of the orange zest and give it a little mix. Sift flour, baking powder and salt into mixture and add sour cream. Gently mix until incorporated. Fold 2 tablespoons of chips into the mix.

Divide batter among 12 cups and then sprinkle a couple remaining chips and small pinch zest on top of each one. Bake in the oven for 12-14 minutes, or until a toothpick inserted in the center of one comes out clean.
