I love quick, easy, and tasty meals and, with only three ingredients flavor-packed ingredients and taking only 20 minutes from start to finish, this definitely falls under all three categories!
As I mentioned in a previous recipe post on Slow Cooker Fajita Chicken, I love how versatile it is. I eat it on salads, with rice, couscous or quinoa, wrap up as fajitas, stuffed in a flat as quesadillas or this way, as pizza! You can make your own dough for this, but I used store-bought as a short-cut for dinner tonight.
- 1 store bought can/ball of pizza dough (I used Pillsbury Classic Pizza Crust, 13.8 oz can)
- 1 cup of my Slow Cooker Fajita Chicken
- 1/2 cup of reduced fat Mexican shredded cheese (or any light shredded cheese)
Set oven to 400f. Grease baking sheet and roll or stretch dough into thickness of pizza you like.
Pre-bake dough for about 8 minutes (or based on instructions of the dough you are using).
Carefully remove from oven and evenly spread fajita chicken around dough. Sprinkle with cheese, and any other spices you like. I sprinkle with a bit of cilantro and red pepper flakes.
Return to the oven to bake for about 8-10 minutes until cheese is bubbly and crust is light brown around the edges.
