Raspberry White Chocolate Oat Muffins

Jumbo Raspberry White Chocolate Oat Muffins – only 180 calories / 5 points each!

If you make them standard muffin size they are only 90 calories / 2 points each!

As good as those big ridiculously unhealthy coffee shop muffins, but better because you can actually enjoy them guilt-free!

Ingredients |

  • 1 cup oats
  •  ¾ cup whole wheat flour
  •  1 teaspoon of baking powder
  •  ½ teaspoon of baking soda
  •  ¼ cup of sweetener+sugar blend (I used Domino Stevia and Sugar Blend)
  •  Pinch of salt
  •  3 tablespoons of sugar free raspberry jam
  •  ½ cup of low fat buttermilk
  •  ½ cup of unsweetened applesauce
  •  1 egg, lightly beaten
  •  1 teaspoon of vanilla extract
  •  2 tablespoons of white chocolate chips

Instructions |

Preheat oven to 375f. Line cupcake tin with liners and spray liners with non-stick cooking spray. In a mixing bowl combine oats, flour, baking powder, baking soda, sweetener, and salt. Add jam, buttermilk, applesauce, egg, and vanilla extract and mix together but do not over mix. Gently fold in chocolate chips.

Line muffin cups with liners and spray them with a very light coating of non-stick cooking spray. Divide batter among  6 jumbo muffin cups or 12 muffin cups and bake for about 17-20 minutes or until a wooden stick inserted in the center of one muffin comes out clean.

Allow to cool for at least an hour before enjoying.
