I went to a popular coffee/donut chain the other morning and got a large skinny latte. The woman at the counter asked which free donut I wanted, as the large latte comes with one. Donuts are a weakness for me – I love them!
Nowadays, I am just not willing to throw 300 cals/8 points away on a donut that I’ll eat in two minutes. When I got home I took out my the donut pan and whipped these up – they take less than 20 minutes from start to finish and kids would love making (and eating) these!
THEY. ARE. AMAZING. Seriously.
All for fewer than half the calories, fat, and points in a coffee shop sprinkles donut.
If you don’t have a donut pan, just make this in a standard or mini cupcake pan for little donut cakes, or in a cake pop pan for donut holes or cake pops.
So pack one of these beauties in your bag and head to the coffee shop for a guilt-free sweet accompaniment to your coffee or tea!
- 1 cup flour (I used unbleached cake flour blend)
- 1/4 cup sweetener+sugar baking blend (I used Truvia baking blend)
- 1 tsp baking powder
- 1/2 tsp salt
- 1 egg, beaten
- 1/2 cup lowfat buttermilk
- 2 tbsp light butter spread (I used Brummel and Brown yogurt spread)
- 2 squares bittersweet baking chocolate (I used Ghiradelli 60% cocoa baking chocolate)
- 1 tbsp rainbow sprinkles
Preheat the oven to 425f degrees.
Spray the pan with cooking spray (I used coconut oil spray, great for high heat cooking).
In a bowl, sift flour, sugar blend, baking powder and salt. Add egg, buttermilk, and melted butter. Combine ingredients but do not over mix.
Fill each donut/cup/hole 2/3 way full. Bake 7-9 minutes until they brown around sides and spring back when pressed lightly. Allow to cool in pan for at least 5 minutes.
On a small dinner plate, place 2 squares of chocolate and microwave for 30 seconds. Microwave again for another 30 seconds or so, until chocolate is melted. Spread chocolate around plate with a rubber spatula and dip each donut in.
Sprinkle evenly with sprinkles. EAT!!
