Zoodles with Maple Chili Salmon

photo8If you haven’t tried ‘zoodles’ (zucchini noodles) before they are pretty great!

This is a wonderful way to satisfy the craving for a pasta dish without all of the carbs. I made this with Asian flavors and tossed the zoodles with some panko breadcrumbs for a little crunch.

Ingredients |

  • 1 2oz. salmon steak
  • 1 medium zucchini
  • 1 tablespoon breadcrumbs (I used Panko)
  • 1/2 teaspoon corn starch
  • 1 teaspoon sesame oil
  • 1 carrot, shredded
  • 1/2 pepper, shredded
  • 1/2 small onion, finely chopped
  • 1/2 tsp garlic powder
  • 3 teaspoons soy sauce
  • 1 teaspoon pure maple syrup
  • 1/4 teaspoon chili sauce

Instructions |

I used a mandolin to very thinly slice one medium zucchini in long strips (0pp). I then tossed them with panko breadcrumbs (1pp) and a teaspoon of corn starch (0pp). Stir fry them in a teaspoon of sesame oil (1pp) before adding shredded carrots, peppers and onion, along with 2 tsp of soy sauce, and some garlic powder.

I put the zoodles on a plate and sautéed a piece of salmon (3pp) that I had brushed with some maple syrup mixed (0pp) with chili paste and a teaspoon of soy sauce (0pp)
