Veggie Ribbon Pizza

photo2Everyone’s eating Dominos and I had to excuse myself to make myself a low point pizza. I’ve already enjoyed enough treats today so I’m being good for dinner and don’t mind because you can make healthy food taste and look as good or better than all that other stuff!

Ingredients |

  • 1 Flatoutbread Thin Crust Flatbreads Artisan Pizza
  • 1 tablespoon tomato paste
  • 1 handful of mixed greens
  • Small amount of butternut squash, carrot, onion, and pepper for ribbons
  • 1 teaspoon olive oil
  • 1/4 cup light cheese
  • 1/2 teaspoon Italian herbs

Instructions |

I baked a Flatoutbread Thin Crust Flatbreads Artisan Pizza (4pp) at 350f for 3 mins directly on the oven rack, this will give you a crispy pizza base!

Add a tablespoon of tomato paste (this is 0pp – I never use sauce, paste keeps thin crusts from getting soggy). Lay a bunch of mixed greens and some peeled ribbons of butternut squash, carrot, onion, and pepper (0pp). For the peeled ribbons I sliced the vegetables carefully with a veggie peeler and then sautéed them for 2 minutes in a teaspoon of olive oil (1pp).

Sprinkle the light cheese (2pp), give it a quick spray of olive oil cooking spray (0pp) and then sprinkle some Italian herbs. Place on the center rack for another 6-8 minutes. Pizza temptation averted for 7 pp which means bring on a glass of red wine.
