2-Minute Breakfast Burrito – your typical breakfast burrito will have eggs in it, but that usually involves pans, spatulas, time and clean-up. If I want a quick breakfast burrito, I spread 1/4 of an avocado that I’ve mashed with a fork on a light Flatoutbread wrap with a couple chopped mushrooms and cherry tomatoes, and an ounce of light shredded cheese.

Sprinkle with salt and pepper if desired. Nuke for a minute. Done!
