I arrived in the UK today to spend two weeks in London for both a work conference and little visit with the in-laws. They love American style BBQ pulled pork and I always make it for them when I visit.
- 2 oz pork tenderloin
- 1 light whole wheat bun
- Mixed greens
- 1/2 butter squash
- 2 peaches
- 4 tbs of my Sticky Sweet Smoky Sauce
We actually got to sit outside and eat as it’s a rare sunny and warm spring day here. I served the pork (made in slow cooker with a bit of water and seasonings) on a toasted bun with a bit of mixed greens and some roasted butter squash that I just seasoned with a bit of salt, pepper and parsley. I roasted a few peaches at the same time that I just brushed with a bit of apricot jam too so they’d get all nice, soft and sticky. Bit of my sauce mixed in with the pork and on the side for dipping and, because it’s the weekend, a lovely bottle of peach and apricot cider.
