Light Sausage, Egg and Cheese ‘McGriddle’

Ever had a sausage egg and cheese McGriddle at McDonald’s? If not, it’s a breakfast sandwich made with two maple syrup infused pancake halves stuffed with sausage (or bacon) egg and cheese. It’s also 15 points. I decided I wanted one without the 15 points part…You. Must. Try. This. It’s so good!

Not only is it just 6 points, it is also bigger than the fast food breakfast sandwich that inspired me to create it. Win win!

Ingredients |

Pancakes:

  • 1/4 cup buttermilk pancake mix (‘just add water’ kind, I used Krusteaz brand)
  • 1/3 cup water

Fillings:

  • 1 turkey sausage link
  • 1 egg white
  • 1 slice UltraThin cheese (or a half ounce/14g of any light cheese)
  • 2 tsps reduced sugar apricot jam (or sugar free breakfast syrup)

Instructions |

Prepare two pancakes in a pan with non-stick cooking spray. I make the two pancakes side by side, close enough so that the batter overlaps, making a little pancake sandwich bread. You can just cook two pancakes (3pp) and use it like sandwich bread.

Grill in a pan with just cooking spray and halved lengthwise cook one turkey sausage link. Cook one egg white – I bake mine in a jumbo cupcake pan sprayed with nonstick spray to get that round shape.

I spread each pancake with a tsp of reduced sugar apricot jam (0pp) and then laid the two halves of a turkey sausage link (2pp) down. I added the egg white (0pp) and the slice of cheese (1pp) and then very happily ate my 6 point ‘McGriddle’ with 0 guilt.
