- 1 sandwich thin
- 2 teaspoon tomato paste
- 1/2 cup shredded chicken breast
- 4 tablespoons my creamy buffalo blue cheese sauce
- 2 slices ultra thin pepper jack cheese
- 2 teaspoons light blue cheese dressing
Lunch is a divided sandwich thin (2pp), each spread with a teaspoon of tomato paste (0pp) and then topped with a mix of 1/4 cup of shredded chicken breast (1pp) and 2 tablespoons of my creamy buffalo blue cheese sauce (1pp). Each piece then topped with a slice of ultra thin pepper jack cheese (2pp, Sargento).
Baking directly on the oven rack (crispier that way) at 375f for 6 minutes, I cut them into wedges and top with 2 tsps of light blue cheese dressing (0pp, Bolthouse Farms yogurt dressing from Target).
I ate them with grilled pineapple – 6 points well spent!
